More information about Casa Mariol Vermut Negre The Casa Mariol Vermut Negre takes us to the sun-drenched terraces of Barcelona. What makes it so dark in color? The mahogany color comes from green walnuts – a dyeing process that we had never seen before. The wine is made from 100% Macabeo (also known as one of the most important grape varieties for Cava) from the protected Terra Alta region. This also makes the vermouth somewhat less acidic and more floral. No less than 150 different botanicals are used for the macerate – a herbaceous affair, albeit unagitatedly bitter. On the nose: thyme, orange peel, vanilla, cinnamon and light aniseed notes. We recommendEnjoy this vermouth the Catalan way – add an orange peel and skewered olive to the glass, add a splash of soda water and serve with preserved sardines and patatas bravas.
