Although these agave spirits made from the Maximiliana agave species known as lechuguilla come from the epicenter of tequila production, they are not produced from the classic tequila agave. Therefore, they cannot be called tequila. For the Destilado de Pulque, the fermented juice of Salmiana agave (also known as pulque) from the state of Tlaxcala is distilled. The result is exotic and complex and recognizable by its typical pulquetaste.
