Thienot x Penfolds Blanc de Noirs Gift box 2012

This Champagne is the result of a collaboration between Peter Gago of Penfolds and the renowned Champagne house Thienot. It is a pure, white-pressed Pinot Noir from the 2012 vintage. The fruit comes from the Chambre aux Loups site in Aÿ, from a one-hectare parcel on a mid-slope with east/southeast exposure. At 6.4 g/l acidity and a pH of 3, the Champagne was dosed at 4 g/l. The Blanc de Noirs is a complex wine with notes of walnuts, raspberries, wild strawberries, red storage apples, and a hint of stems. On the palate, it shows very fine tannins in the red-berry and citrus fruit. In addition, the Champagne appears spicy, saline, and fine in its mousse.
