Ornellaia’s red wines enjoy a reputation like thunder. The fact that Sauvignon Blanc, which reflects the spirit of Ornellaia in a completely different way, also grows on three of the Tenuta’s plots is often overlooked. Yet the price of the single-varietal Cabernet Sauvignon proves that it is produced to a very high standard. After the non-destemmed grapes are pressed, they are fermented in barriques and tonneaux, 25% of which are first fermentation. This is followed by ageing on the lees with regular stirring, further ageing and only light fining before bottling. The result is a top-class Sauvignon Blanc. The 2021 shows a highly complex aroma with apricot, acacia blossom, sage, wild herbs and roasted hazelnuts.
